Foraged Feast: Creating Gourmet Dishes with Minnesota's Wild Edibles

Foraged Wild Mushroom Risotto
Ingredients:
- 2 cups of foraged wild mushrooms (morels, chanterelles, or any edible mushrooms you can find)
- 1 cup Arborio rice
- 4 cups vegetable broth
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1/2 cup dry white wine
- 1/2 cup grated Parmesan cheese
- 2 tbsp butter
- 2 tbsp olive oil
- Salt and pepper to taste
- Chopped fresh parsley for garnish
Instructions:
- Start by cleaning your foraged mushrooms thoroughly. Rinse under cold water to remove dirt and debris, then pat dry with a paper towel. Slice if necessary.
- In a large pan, heat the olive oil and 1 tbsp of butter over medium heat. Add the chopped onion and garlic, sauté until translucent and fragrant.
- Add the sliced wild mushrooms and cook until they are tender and browned, about 5-7 minutes. Remove a few mushrooms to use as a garnish later.
- Stir in the Arborio rice, allowing it to toast slightly, about 1-2 minutes.
- Pour in the white wine, stirring continuously until it is almost completely absorbed by the rice.
- Begin adding the vegetable broth, one cup at a time, stirring frequently. Allow the broth to absorb before adding more. This process will take about 20 minutes in total.
- Once the rice is creamy and cooked through, stir in the remaining butter and grated Parmesan cheese. Season with salt and pepper to taste.
- Garnish with the reserved mushrooms and fresh parsley.
