Ingredients:

  • 2 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1/2 cup (1 stick) cold unsalted butter, cubed
  • 1/2 cup heavy cream
  • 1/4 cup fresh lemon juice
  • 1/4 cup fresh orange juice
  • 1 tbsp lemon zest
  • 1 tbsp orange zest
  • 1 large egg
  • Coarse sugar, for sprinkling (optional)

Instructions:

  • Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  • In a large mixing bowl, whisk together flour, granulated sugar, baking powder, and salt. Add the cubed cold butter and cut it into the flour mixture using a pastry cutter or two knives until the mixture resembles coarse crumbs.
  • In a separate bowl, combine heavy cream, lemon juice, orange juice, lemon zest, orange zest, and the egg. Mix well.
  • Pour the wet ingredients into the dry ingredients and gently mix until just combined. Do not overmix.
  • Transfer the dough to a floured surface and shape it into an 8-inch round disc. Cut the disc into 8 wedges.
  • Place the wedges onto the prepared baking sheet, spacing them out evenly. Sprinkle the tops with coarse sugar if desired.
  • Bake for 15-18 minutes, or until the scones are golden brown and a toothpick inserted into the center comes out clean.
  • Let the scones cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
